Brazil recipes feature flavor and variety
Brazil recipes reflect the strong cultural mix in the history of Brazil, and the wide variety in the type of foods that can be found in the country. The indigenous peoples relied largely upon dishes prepared with ingredients such as corn, and various root vegetables including manioc and sweet potato. The native peoples also had perfected the ability to preserve meats through drying and smoking well before the Portuguese colonized the area beginning in 1533.
The Portuguese had their own culinary abilities with use of the foodstuffs available in the regions of their homeland, which for over 300 years had an overlay of occupation by the Moors. The Moor influence can be seen in Brazil recipes featuring the spices of saffron, cumin and coriander added to stews and meat dishes. This style of food preparation was popular and incorporated in Portugal although not in the rest of the Iberian peninsula.
By far the largest influence on Portuguese cooking carried to Brazil was the input from the West African slaves used by the Moors. From this group came the use of palm oil, coconut milk, dried fruits and coffee, all of which were incorporated into Brazil recipes.
Brazil recipes today include the staples of manioc, corn, dried beans of various kinds, fruits and vegetables. There are some regional differences; recipes of Brazil's northern provinces the diet is heavily fish, root vegetables and fruit. To the south, particularly in the eastern portions, Brazilian recipes will be more likely to feature corn, beans and pork dishes.
The adventuresome cook can find many recipes online that feature traditional Brazilian foods and methods of preparation. For example, a loin of pork might be flavored with the juice of fresh limes, onions, and green onions. A side dish made of tomatoes, onion, hard boiled egg, manioc meal adds dried prunes, raisins and walnuts for a unique and delicious flavor combination.
Desserts tend to be lighter than the balance of the meal, with beaten egg whites, coconut flakes and sugar whipped together and baked briefly in the style of a meringue is a typical example.
Since Brazil is a modern country with citizens from all corners of the world, there are many different cuisines that are incorporated into the typical fare. The recipes of Brazilian cooks will often use elements from any or all of the other national dishes and make something entirely new from them.
